Potato Goop

From time to time we like to share a favorite recipe.  This one doesn't sound overly appetizing since we call it goop but it is super yummy.  We love a good baked potato in our house and several years back at a family gathering my auntie made what we like to call "Goop."

I couldn't get a super great pic of the goop this evening but trust me you're gonna want to try it!

Ingredients:
Butter
Sour Cream
Cheddar Cheese (Shredded)
Bacon (cooked until crispy then broken into pieces)
Salt and Pepper to Taste
Optional:  Green Onions (chopped)

I don't have exact measurements but we take Sour Cream and mix it with butter until there is somewhat of a thickness to it and it tastes like we want it.  Add a good cup of Shredded Cheddar Cheese (by the way I don't use the finely shredded, we like the thicker shreds).  Cook the Bacon (usually 3-4 pieces) until really crisp and break apart into pieces for homemade bacon bits.  Mix all together and add Salt/Pepper to taste.  We put it in the fridge to set for about an hour before serving.

Enjoy!  Hope you had a happy Monday!!
